Iced Pour-over

An iced pour-over is not just a hot brew you chilled. It is a hot brew that lands directly on ice, cold-shocking the aroma and locking in what would otherwise steam off.
The trick is that some of your water is ice. Around forty percent of the total. You brew stronger than usual, and the melting ice dilutes the cup by the time you sip it.
What you get is the clarity of a filter brew with the temperature of a summer afternoon.

How to brew

Weigh 120 g of ice into the server. This is your dilution.

Bloom the coffee with 40 g of hot water. Rest 30 seconds.

Pour to 200 g in slow spirals.

The draw-down lands on the ice and cools instantly. Swirl. Pour over fresh ice in a glass.
