The French press is the honest workhorse. No paper filter, no technique to hide behind, just water and coffee sitting together for four minutes. What you lose in clarity you gain in body — heavy, round, oily in the good way.

The only real rule: do not let the grounds sit in the press after you serve. Decant everything into another jug, or the last cup will taste like an ashtray.

Coarse grind, or you will drink sediment. Coarse grind and a slow press, and you will drink one of the friendliest cups in coffee.

How to brew

  1. 0:00

    Coffee in. Pour all the water in one go. Set a timer.

  2. 4:00

    At 4:00, break the crust with a spoon. Skim the foam off.

  3. 6:00

    Let it rest another 2 minutes so the grounds fall.

  4. 10:00

    Press slowly, all the way down. Pour immediately. Decant the rest.
