The phin is Vietnam in a small steel filter. It brews by gravity, at its own pace, and it does not care that you are in a hurry.

Robusta was made for this brewer. High body, low acidity, the kind of coffee that stands up to condensed milk without disappearing into it.

A phin does not ask for technique. It asks for the right grind and a little patience. Both are free.

Recipe

How to brew

  1. 0:00

    Warm the glass. Rinse the phin with hot water.

  2. 0:15

    Coffee in. Level it. Set the gravity screen down gently.

  3. 0:30

    Bloom with 30 g water. Wait 30 seconds.

  4. 1:00

    Fill to the line. Lid on. Walk away for four minutes.

  5. 5:00

    When it stops dripping, stir in condensed milk, or pour over ice. Both are right.
