Everyone starts with the pour. Everyone should start with the milk. If the microfoam is right — glossy, wet-paint texture, no visible bubbles — the design almost draws itself.

High pour first. Get the jug up and pour thin, cutting into the crema and letting the espresso settle. When the cup is about two-thirds full, drop the jug close to the surface. That is when the white shows up.

A rosetta is a wiggle back and a cut through. A tulip is three stops with a cut. You will pour hundreds of blobs before you pour a leaf. That is fine.

How to brew

  1. 0:00

    Pour from height to break through the crema and settle the espresso.

  2. 0:05

    Cup at a tilt. Keep the pour thin.

  3. 0:10

    Drop the jug close to the surface. Pour into one spot until white appears.

  4. 0:15

    Wiggle back through the cup and cut a thin line to finish.
